A Delicious Sea Bass Recipe for the Summer

Sea Bass "a la Donostiarra"


Ingredients

• Water: 1 quart

• Garlic, peeled: 30 grams

• Oil, Extra Virgin: ½ cup

• Chile Arbol: 1 per sea bass

• Bay Leaf: 1 per sea bass

• Salt, Kosher Diamond Crystal: 4 grams

• Vinegar, Sherry: 3 tablespoons

• Fish, Sea Bass: 3 lbs

• Parsley: Zest

Method

1. Ask your fishmonger to filet 2 each seabass (1.5lb each). Ask him to separate the 4 filets and the head and bones separately. If possible, ask them to cut the head and bones in a few pieces so you don't have to do it at home!

Place the head and fish bones on a tray with parchment paper. Add some drops of olive oil and grill the bones about 8 minutes in the oven at 375 F or until golden brown.

3. Place the golden brown grilled fish bones in a casserole dish and add 1 Qt of water.

4. Boil hard until the broth gets reduced to 2 cups.

5. Drain the broth and set aside.

6. In a pan, place the olive oil and garlic and then caramelize until golden brown.

7. Add the bay leaf, chile and vinegar.

8. Reduce 1 minute so the vinegar gets sweet.

9. Drain the infused oil.

10. Place in a vitamix: the stock, the infused oil and salt. Emulsify until you get a stable white sauce.

11. Add salt to the meat side of your seabass filets and massage with some drops of olive oil.
