A Game Day Recipe To Win Over Your Guests

As the weather cools and football season kicks off, Sundays are officially reserved for cheering on our favorite teams. To elevate your game day experience, we turned to Executive Chef Charlie Weng of Verano NYC in Hudson Yards for a delicious, shareable recipe. He delivered. Get ready to impress your guests with the ultimate game-day tacos! With a variety of toppings to choose from, there’s something for everyone—ensuring a happy crowd, no matter the final score!

Below, find the perfect tacos for game days. Everyone can pick their favorite toppings and everyone is happy (no matter who wins the game)!

Ingredients:

40 pounds pork shoulder

120 grams salt

60 grams pepper

80 grams onion powder

80 grams garlic powder

40 grams ground cumin

40 grams ground coriander

30 grams Korean chili powder

(sub. smoked paprika, cayenne pepper)

24 ounces beer (Pacifico, Modelo, Tecate)

20 pieces garlic clove (smashed)

4 pieces red onion (chopped)

Directions:

1. In the mixing bowl, mix all the dry seasonings with the whisk until its well incorporated and set aside.

2. Grab the garlic and place it on the side and with the side of your knife. Smash the garlic flat and set aside, then grab the red onion's peel and chop into small dice and add it with the smashed garlic.

3. Now let's get the pork shoulder and cut into diced chunks. Be careful with cutting into the bone, cut around it and when you cannot cut any more around the bone of the shoulder set it aside and place the pork chunks into a hotel pan.

4. Let's grab our seasoning mixture and dry rub all the pork really well and really Heavy, get in every part of the pork. Once you have finished seasoning the pork Chunks that's in the hotel pan, add the garlic and onion mixture. Mix well until it gets well incorporated.

5. Finally, let's grab the bone of the pork shoulder and place it inside the hotel pan, trying to make room for it. Open the beer and gently pour over the pork while also pouring in every corner, cover it with the foil in the oven at 300° for 4 hrs.

6. When the 4 hours have passed, take out the hotel pan and remove the aluminum foil and with the pair of tongs start tearing the pork apart. (Key note: If the pork bone on the shoulder slips  right out its perfect.) Place the shredded pork into the half hotel pan and the pork ju with the strainer. Strain it and keep to rehydrate the pork or to add extra flavor
