Staying In: Refreshing Summer Recipes from Vitamix

In these difficult times, it's important to find activities and tasks to do that will keep you feeling productive and centered. We can't think of a more enriching and nurturing task than cooking a delicious meal, which is why we asked Vitamix to send over some refreshing summer recipes. Start with a whole fruit margarita, then gobble down a tangy gazpacho, followed by a smoky avocado tahini dip. Top it off with a mango basil freeze for a healthy(ish) dessert. 

Whole Fruit Margarita

Ingredients

 

∙ ¼ cup (60 ml) water
∙6 ounces (180 ml) tequila
∙2 fluid ounces (60 ml) Grand Marnier
∙1 Large orange, peeled, halved
∙ 1 small lime, peeled
∙ 1 lemon, peeled, halved
∙ 6 Tablespoons (75 g) granulated sugar
∙ 6 cups (600 g) ice cubes

 

Directions

 

1) Place all ingredients into the Vitamix container in the order listed and secure lid.

2) Select Variable 1.

3) Turn machine on and slowly increase speed to Variable 10, then to High.

4) Blend for 45 seconds, using the tamper to press the ingredients into the blades.

5) Pour into salt-rimmed margarita glasses.

 

Gazpacho Recipe

Ingredients

 

∙ 3 cups (720 ml) tomato juice
∙ ⅓ cup (80 ml) red wine vinegar
∙ ¼ cup (60 ml) olive oil
∙ 2 tomatoes, quartered
∙ 1 cucumber, peeled, quartered
∙ ½ (60 g) small onion, peeled, halved
∙ 1 green bell pepper, stemmed, seeded, diced
∙ 1 dash hot sauce
∙ Salt and pepper, to taste

 

Directions

 

1) Place all ingredients into the Vitamix container in the order listed and secure lid.

2) Select Variable 1.

3) Turn machine on and slowly increase speed to Variable 5.

4) Blend for 30-45 seconds.

5) Stop machine, season soup and serve immediately.

Note: Serve over additional chopped cucumbers and tomatoes.

 

Avocado Tahini Spread

Ingredients 

 

∙ 3 avocados, pitted and peeled
∙ 1 cup (240 ml) water
∙ 6 Tablespoons (90 ml) lemon juice
∙ 1⅓ cup (300 ml) Tahini
∙ 2 teaspoons ground cumin
∙ ½ cup (20 g) fresh cilantro leaves, chopped
∙ 2 teaspoons salt

Directions

 

1) Place all ingredients into the Vitamix container in the order listed and secure the lid.
2) Select Variable 1, or the Puree (Dips + Spreads) program.
3) Start the machine, slowly increase to its highest speed, and blend for 45 seconds; or start the machine and allow the Puree (Dips + Spreads) program to complete. Use the tamper to press the ingredients toward the blades.

 

Mango Basil Freeze


 Ingredients 

 

∙ 1½ cup (360 g) yogurt, (or Non-Fat Greek Yogurt)
∙ 2 Tablespoons (5 g) basil, fresh chopped
∙ 2 Tablespoons honey, or other sweetener, to taste
∙ 1 Tablespoon lime zest
∙ 1½ pound (670 g) frozen mango

 

Directions

 

1) Place ingredients into the Vitamix container in the order listed. Secure the lid.
2) Select Variable 1.
3) Start the blender and increase to its highest speed, tamping vigorously.
4) Blend and tamp for 55 seconds.

Notes: When the frozen dessert is finished processing, you will see 4 distinct mounds at the top of the blend. Optimal temperature for frozen ingredients is 20 to 25 degrees Fahrenheit.
